Nutritional Study during Drying and Storage of Dehydrated Summer Onion
Abstract
The present study was undertaken to observe the nutritive value of fresh, dehydrated, osmosed and sulphited summer onion. Nutrient content of fresh and dehydrated onion on dry weight basis showed that there are least losses of nutrients during the drying process.
